Spicy Scallion Beef Stir-fry

Ingredients
  

  • 1 lb flank steak or sirloin thinly sliced against the grain
  • 1 tbsp soy sauce for marinating
  • 1 tbsp cornstarch for marinating
  • 1 tbsp neutral oil plus more as needed
  • 1 tbsp minced garlic
  • 1 tbsp fresh grated ginger
  • 6 scallions cut into 2-inch segments
  • 2 tbsp soy sauce for the sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili garlic sauce adjust to taste
  • 1 tsp sesame oil optional
  • red pepper flakes optional, to taste

Instructions
 

  • In a bowl, toss sliced beef with 1 tbsp soy sauce and cornstarch. Let sit while prepping remaining ingredients.
  • Heat 1 tbsp oil in a wok or skillet over high heat. Sear beef in batches until browned and just cooked through. Set aside.
  • Add more oil to the pan if needed. Sauté garlic and ginger for 30 seconds until fragrant.
  • Add scallions and stir-fry for 1–2 minutes until slightly charred and softened.
  • Return beef to pan. Pour in remaining soy sauce, oyster sauce, and chili garlic sauce. Toss everything together and let cook for 2–3 minutes until glossy and hot.
  • Drizzle with sesame oil, top with red pepper flakes (if using), and serve immediately over rice or noodles.

Notes

Customize the spice level and protein—this stir-fry also works great with chicken, tofu, or mushrooms. Leftovers reheat beautifully for weekday lunches.
