Ingredients
  

Jalapeños

  • 8 fresh jalapeños halved and deseeded

Buffalo Chicken Filling

  • 2 cups cooked and shredded chicken
  • 4 oz cream cheese softened
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup buffalo sauce
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste

Wrapping & Serving

  • 8 slices bacon cut in half
  • ranch or blue cheese dressing for dipping

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Prepare the filling: In a bowl, mix shredded chicken, cream cheese, cheddar cheese, buffalo sauce, garlic powder, onion powder, salt, and pepper until well combined.
  • Stuff the jalapeños: Fill each jalapeño half with the buffalo chicken mixture, pressing gently to pack it in.
  • Wrap in bacon: Take a half slice of bacon and wrap it around each stuffed jalapeño, securing with a toothpick if needed.
  • Bake: Place the jalapeño bombs on the baking sheet and bake for 20-25 minutes, or until the bacon is crispy and golden brown.
  • Serve: Let them cool for a few minutes before serving with ranch or blue cheese dressing.

Notes

For an extra crispy version, try making these in an air fryer at 375°F for 12-15 minutes. You can also grill them over medium heat for 10-15 minutes, flipping halfway through.
