Mushroom BBQ Bacon Cheeseburger Stuffed Peppers

Ingredients
  

Peppers

  • 4 large bell peppers any color

Filling

  • 1 lb ground beef
  • 6 slices bacon cooked and crumbled
  • 1 cup mushrooms finely chopped
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 0.5 cup BBQ sauce plus extra for drizzling
  • 1 tsp Worcestershire sauce
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the insides with olive oil and place them in a baking dish.
  • Heat a large skillet over medium heat and add olive oil.
  • Sauté onions, mushrooms, and garlic until softened, about 3–4 minutes.
  • Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
  • Stir in BBQ sauce, Worcestershire sauce, crumbled bacon, salt, pepper, and smoked paprika. Cook for another 2 minutes, then remove from heat.
  • Evenly divide the beef mixture among the hollowed-out peppers.
  • Top each stuffed pepper with shredded cheese.
  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove foil and bake for another 10 minutes until the cheese is melted and bubbly.
  • Drizzle with additional BBQ sauce and serve hot. Enjoy!

Notes

For a spicy twist, add diced jalapeños or a dash of hot sauce to the beef mixture. You can also swap ground beef for ground turkey or chicken for a lighter version.
