Ingredients
  

Pizza Base

  • 4 flour tortillas 8-inch

Chicken Topping

  • 2 cups cooked chicken shredded
  • 1 tbsp olive oil
  • 1 packet taco seasoning

Toppings

  • 1 cup refried beans
  • 2 cups Mexican blend cheese shredded
  • 1 cup salsa
  • 1 small red onion thinly sliced
  • 1 bell pepper diced, any color
  • 1 jalapeño thinly sliced, optional
  • 1/4 cup black olives sliced
  • 1/4 cup corn kernels
  • fresh cilantro for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix shredded chicken with taco seasoning and olive oil until evenly coated.
  • Lay tortillas on the prepared baking sheet. Spread a thin layer of refried beans on each tortilla, leaving a small border around the edge.
  • Evenly distribute the seasoned chicken over the beans. Sprinkle with diced bell pepper, red onion, corn, jalapeños (if using), and black olives.
  • Generously cover the toppings with shredded Mexican blend cheese.
  • Bake for 10-12 minutes, or until the tortillas are crispy and the cheese is melted and bubbling.
  • Top with fresh salsa, cilantro, and serve with sour cream and guacamole if desired.

Notes

For a crispier base, pre-bake the tortillas for 2-3 minutes before adding toppings. Brush edges with olive oil and garlic powder for extra flavor.
