  • 1 ripe pineapple peeled, cored, and cut into 1-inch chunks
  • 1 cup Malibu coconut rum
  • 2 tbsp granulated sugar optional
  • 1 lime zested and juiced
  • fresh mint leaves for garnish (optional)
  • toasted coconut flakes for garnish (optional)

Instructions
 

  • Place the pineapple chunks in a shallow container or resealable plastic bag.
  • In a small bowl, combine the Malibu rum, sugar (if using), lime zest, and lime juice. Stir until sugar is dissolved.
  • Pour the rum mixture over the pineapple chunks, ensuring they're well coated.
  • Seal the container or bag and gently shake to distribute the liquid.
  • Refrigerate for at least 2 hours, or preferably overnight, turning occasionally to ensure even soaking.
  • Before serving, drain excess liquid (save it for cocktails!).
  • Arrange the pineapple bites on a serving platter and garnish with fresh mint leaves and toasted coconut flakes if desired.

Notes

These bites can also be frozen for a cool treat or briefly grilled for added caramelization. For a non-alcoholic version, use coconut water with coconut extract. The leftover rum mixture makes a great cocktail base—don't throw it away!
