Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 cup buttermilk

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until a soft dough forms.
  • Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8-10 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies in a ziplock bag for up to 2 months. To refresh, warm them in a 300°F (150°C) oven for a few minutes.
