Ingredients
  

  • 3 large eggs separated
  • 1/4 tsp cream of tartar
  • 1/2 cup cottage cheese 4% or 2% fat
  • 2 tbsp cream cheese softened
  • 1/4 tsp garlic powder optional, for savory version
  • 1/4 tsp salt
  • 1/4 tsp dried herbs like oregano or rosemary, optional
  • 1 tbsp grated Parmesan cheese optional

Instructions
 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Separate eggs into two bowls—whites in a large bowl, yolks in a medium bowl.
  • Add cream of tartar to egg whites and beat on high until stiff peaks form (3-4 minutes).
  • In the yolk bowl, add cottage cheese, cream cheese, salt, and optional seasonings. Beat until smooth.
  • Gently fold yolk mixture into egg whites using a rubber spatula, being careful not to deflate the whites.
  • Spoon mixture into 6-8 rounds on the baking sheet, spacing evenly.
  • Bake for 25-30 minutes until golden brown and set.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a sweet version, add 1 tsp vanilla and 1 tbsp sweetener. Cloud bread softens in storage—toast before eating for best texture.
