Ingredients
  

Sugar Cookie Base

  • 3/4 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Fruit Toppings

  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup mandarin orange segments
  • 1 cup green grapes halved
  • 1 cup diced kiwi
  • 1 cup diced pineapple
  • 2 tbsp apricot preserves for glaze
  • 1 tbsp water for glaze

Instructions
 

  • In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes. Add the egg and vanilla extract, mixing until well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the dough in half and flatten each half into a disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use an egg-shaped cookie cutter to cut out shapes. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are just beginning to turn golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Beat the cream cheese and butter together until smooth. Add the vanilla extract, then gradually add the powdered sugar, beating until smooth and creamy.
  • Once the cookies are completely cool, spread a layer of cream cheese frosting on each cookie.
  • Decorate each cookie with the sliced fruits in striped or patterned arrangements to resemble Easter eggs.
  • In a small saucepan, heat the apricot preserves and water until melted and smooth. Using a pastry brush, gently brush the glaze over the fruit to give it a shiny appearance and help preserve freshness.

Notes

For a fun variation, try using different cookie shapes or swapping out fruits for your favorites. You can also use chocolate sugar cookies or add lemon zest to the frosting for extra flavor!
