Crispy One-Pan Egg and Beef Toast

Ingredients
  

Beef Mixture

  • 1/2 lb ground beef lean or regular
  • 1 tbsp olive oil for cooking
  • 1/4 cup onion diced
  • 2 cloves garlic minced
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper

Toast & Eggs

  • 2 slices sturdy bread sourdough or country loaf
  • 2 tbsp butter for toasting
  • 2 large eggs

Optional Toppings

  • 1/4 cup shredded cheese cheddar or mozzarella
  • fresh herbs for garnish (parsley or chives)

Instructions
 

  • Heat a large skillet over medium-high heat. Add olive oil, then ground beef, breaking it up with a wooden spoon.
  • Add diced onion, minced garlic, salt, and black pepper. Cook until the beef is browned and crispy at the edges.
  • Push the beef to one side of the pan. Add butter to the empty side and let it melt until foaming.
  • Place bread slices in the melted butter, pressing down slightly. Toast until golden brown on one side, then flip and repeat.
  • Make small wells in the beef mixture and crack the eggs directly into them. Cover the pan and cook for 3-4 minutes until the whites are set but yolks remain runny.
  • If using cheese, sprinkle it over the beef and eggs, allowing it to melt.
  • Place crispy toast slices on plates. Spoon the beef mixture and eggs over the toast. Garnish with fresh herbs and serve immediately.

Notes

For extra flavor, rub a clove of garlic on the toast after cooking. Serve with hot sauce or roasted tomatoes for an added punch.
