  • 4 slices crusty Italian bread or ciabatta toasted optional
  • 4 oz fresh mozzarella sliced into 1/4 inch slices
  • 1 tomato sliced, Roma or heirloom
  • 1 handful fresh basil leaves
  • 1 tbsp balsamic glaze
  • 1 tbsp extra virgin olive oil
  • salt and black pepper to taste

Instructions
 

  • Slice fresh mozzarella and tomatoes into 1/4-inch thick slices. Wash and pat dry the basil leaves.
  • Optional: Toast the bread on a grill pan or in a toaster until lightly golden and crisp.
  • Drizzle olive oil on the cut side of the bread. Layer mozzarella slices first, followed by tomato slices, and fresh basil leaves.
  • Season with a pinch of salt and cracked black pepper.
  • Drizzle balsamic glaze over the top, close the sandwich, and press lightly if desired. Serve immediately.

Notes

To avoid sogginess if packing for later, keep balsamic glaze and tomato separate until ready to eat. Add prosciutto or avocado for a tasty variation.
