Ingredients
  

Bread & Butter

  • 2 slices artisan bread sourdough or brioche recommended
  • 2 tbsp butter softened

Filling

  • 4 oz brie or white cheddar cheese sliced
  • 0.25 cup fresh blackberries
  • 1 tbsp balsamic glaze
  • 1 tsp fresh thyme leaves optional
  • 1 tbsp honey
  • 1 pinch sea salt

Instructions
 

  • In a small bowl, lightly mash the blackberries with a fork. Stir in the balsamic glaze, honey, and thyme leaves if using. Let sit for 5 minutes to allow flavors to meld.
  • Butter one side of each bread slice. On the non-buttered side of one slice, layer half of the cheese, then spread the blackberry mixture evenly on top. Sprinkle with a pinch of sea salt and add the remaining cheese. Top with the second bread slice, buttered side up.
  • Heat a skillet over medium-low heat. Place the sandwich on the hot skillet, butter side down. Cook for 3-4 minutes until golden brown.
  • Carefully flip the sandwich and cook the other side for an additional 2-3 minutes, or until the bread is golden brown and the cheese is completely melted. If needed, cover the skillet with a lid to help the cheese melt thoroughly.
  • Remove from heat and let rest for 1 minute. Slice diagonally and serve warm, with an extra drizzle of balsamic glaze if desired.

Notes

This sandwich is best enjoyed immediately after cooking. If storing, wrap tightly in foil and refrigerate for up to 24 hours. Reheat in a 350°F oven for 5-7 minutes or in a skillet over low heat until warmed through. Avoid microwaving as it may make the bread soggy.
